Berry Nice!
This week the summer berries took up space in my fridge and after having a few extra pints from a precious catering I usually make use of them for the shop's desserts.
First of - Fresh Fruit Tarts. I add a little depth of flavor to the pastry cream by adding peach puree making it slightly tangy and undoubtably having a peach pitch! Here slices of red plums, kiwi, black-blue-raspberries added the splash of colors.
In the view - a Strawberry Shortcake made of lightly sweetened whipped cream frosting a sandwich of yellow cake and macerated slices of strawberries. I'll stop here before our good friend Ryan turns up at the store and I don't have the shortcake in the display case! haha
Theres a view of the Dark Chocolate Mousse with Cointreau Whipped Cream, Nadia's favorite dessert. She hoarded 10 cups for her stash at one point. She's just adorable friend of the shop. They keep well frozen! And not to miss the Rose Buttercream Cupcakes that was featured in the magazine. Behind the Strawberry Shortcake is what I called Summer Berry Shortcake which is basically just a single layer of dense cake, Chantilly Cream and a load of strawberries, raspberries, blackberries and blueberries from the organic market next to our shop. Amazing fruits!
And so that made up the busy week at the shop. It's your turn now to make some sweets! Keep 'em light and simpler for everyone to enjoy!
