Howard's Birthday Pavlova with Raspberries
A friend asked, How do you eat this thing because I don't want to slice it?!
Cakes are just cakes and they are meant to be eaten.. ( but take a picture first and post in on Instagram or Facebook, or tweet?? That's the drill! haha)
With Pavlova it's meant to crumble. It has great texture - a little crunch and then it dissolves in your mouth, sweet and light, cloud-like creaminess and a little tart with the fruits.
Here's a taste and flavor tip for you - a tart fruit, or something sweet like meringue goes well with cream because the sweetness or tartness is neutralized. Take note of the taste of each component when assembling desserts. If one component is sweet, go easy on the sugar with the other component.
Something sweet paired with something sour will heighten the tartness. To counter balance this, pair with a lightly sweetened cream, as in this case with the Pavlova.
