The Rose Perfumed Red Velvet Cake

What looks like a wedding cake is actually just a birthday cake. It is Red Velvet and Cream Cheese Frosting. It's quite ginormous; 8", 12" and 14" cake layers. Each layer is about 5" high.

The client wanted the cake to look simple. And so she did. Simple but elegant. Minimalist. It looks solid but delicate at the same time. Highlights of the cake? 
the frosting is perfumed with rose extract. Pieces of candied rose petals and pink sugar pearls adorn the cake. 

Layer Cakes are always challenging. You always want to have a good plan with the following things in minds:
- make a design;
- serving portions corresponding the size of the cake layers; 
- Make sure the cake taste the same when the client first tried it on the tasting;
- when to bake and frost the cake;
- what's the physical environment the cake's going to be in once it gets to the venue;
- How do you transport the cake so it's safe and won't fall apart.
- how do you make the cake layers stable for transporting?

Plan ahead. Always have a good perspective whenever working on a project. Anticipate what you will need from start to finish. And not just from your end, think about how your cake will stay beautiful until the first slice. Success!!!
