What Color is your Macaron?

A Macaron is a great medium to highlight the fruits abundant during the summer months. When you go the farmer's market you see vibrant colors of sun-ripened fruits that are just so tempting to eat. There's different degrees of fruit sweetness and some are just tart because that's how nature intended them to be! Nonetheless I love fruits.

A pairing of white chocolate and fruit purees heighten the sweetness of the macaron filling. That is why it's best to enjoy a macaron savored and paired with your favorite tea or coffee. Doing so balances out the flavors.

Here you see a yellow macaron I filled with mango and vanilla ganache, Chocolate macaron filled with a bittersweet dark chocolate ganache, the pink macaron is filled with a combination of raspberry/strawberry purees and fresh raspberries and milk chocolate ganache, the orange macaron is filled with a peach puree and chamomile infused white chocolate ganache, the fuchsia colored macaron is filled with a black currant white chocolate ganache. These are best paired with tea or a nicely brewed coffee.
