Earl Grey Madeleines
Madeleines served freshly baked with tea or coffee is amazing. These cake/cookie delicacy is very iconic to french tea time rituals, I would assume.
Madeleine mixture is very easy to make and you really have to take time to have the cake batter prepared the day before and chilled in the fridge overnight. Another important step in the preparation of madeleines is making sure that the baking pan, where it gets is distinctive shape, has to be moderate to generously and properly buttered and dusted with flour. The cake really has a tendency to stick to the pan even if you use a non-stick coated pan. It is a very essential step to achieve the clean scalloped shape underside of the pastry.
One of the steps in making the madeleines is melting the butter. When doing this, ensure that the milk solids do not separate from the fat when the butter is melting and warmed up, so you have to keep an eye on it.
You can flavor madeleines with lemon zest, lavender flowers (fresh or dried), green tea, pistachio, earl grey tea and etc. For earl grey madeleines, when the butter has melted and warmed, add loose tea leaves of earl grey and allow it to infuse for 20 minutes. Strain and press the leaves to the strainer to extract maximum flavor.
