JASMINE & GREEN TEA CAKE WITH RASPBERRY MOUSSE



This cake is truly light and delightful. It starts with the green tea sponge cake; vegetal flavor and slightly bitter,  and jasmine tea infused syrup is basted on the cake. The sponge cake is layered with green tea cream in the middle. A layer of raspberry mousse is spread on top of the cake to finish. Garnished with diced strawberries and micro herbs.

If I had it my way anyone who reads this post will have a slice to sample it. Wishes.

This cake is the plated version of a petit four I made for a British designer brand private shopping event.

I am truly happy about this cake and hopefully more projects to come!
