What's Baking, Sugar Hippie?

I had a fairly busy week baking pastries and juggling work. I am happy to be doing what I love the most, even if it means long hours doing components for a dessert and not to mention doing the dishes and cleaning the kitchen afterwards! Hah! That's how it is, kids! You say you love to bake? cleaning dishes comes with it ;) 

So, Okay, first off .. Petit Tart Tatin. An inverted caramelized apple tart sitting on a shortbread cookie crust. The small dollop of lightly sweetened pastry cream scented with lavender sits on top of the mound of molded caramelized apples. And then it is garnished with fresh lavender flowers and pink peppercorn flakes. Interesting, right?



Pastry number 2 is The Truffle Cake ... Red wine soaked Flourless Chocolate Sponge Cake layered with soft dark chocolate ganache and a Miroir Glaze. A sliver of 24K gold leaf to garnish the cake.

Extremely fabulous cake. The taste so divine it just melts in the mouth!

A Fruit Tart of Pâte Sucrée, Crême Chiboust, and organic berries .. and plenty of gorgeous photos!!!!
