Peach Melba Mousse

This is a Peach Melba Mousse. It's looks so cool with the white, pink and deep red color. They represent the flavors of the mousse. A melba consist of peaches, raspberry and cream component. A surprise addition of rose water and syrup with the raspberry took the mousse flavor up another notch. It's fruity and tart and floral at the same time. Each flavor complementing each other rather that overwhelming the other. I like my pastries that way. I like flavors to slowly hit the palate and the mouth-feel smooth that it is pleasant to eat. It's not complicated. 

So what's inside the mousse? poached yellow peaches, fresh raspberries, raspberry rose geleé, genoise soaked in peach syrup, white chocolate mousse, and raspberry rose cream. I love this pastry!
