Bonbons filled with Hazelnut Praline and Caramel Fleur de Sel

If I going to have a pastry shop one of the things I would offer to customers will be a selection of bonbons. Bonbons are these specialty candies enrobed in chocolate, usually a confection covered in a chocolate shell. The shell is made of tempered chocolate. 

I recently made these Hazelnut Praline and Caramel fleur de Sel bonbons for a catering event. These version of the bonbon was brushed with a 24k gold dust. The dark chocolate shell was the perfect base for the gold dust as it just gave depth to the color and sheen. But of course, the chocolate has to be properly tempered so that the shell is already shiny before the gold dust is applied. 

If you want to embark on making bonbons it's best to learn how to temper chocolate properly as this is crucial to the end-product.
