Summer Dessert No. 3 - Purple Berries Shine This Summer

Taste experts say food that have the same color, fruits in particular, go well together. I agree. So that is how this mousse/entremet came to be. Black Currant, Blueberry and Blackberry when mashed together have a purple puree. This puree is then folded in a white chocolate mousse. And the resulting flavor is a creamy fruity delicious ice cream-like flavor you would like to have eating on a nice sunny day. The purple glaze covering the mousse is also flavored with the same berries to amplify the fruit flavors. And yes, the glaze is so shiny and flavorful it's calling your name! lol
