Strawberry Cup filled with Cream cheese Mousse!



Here's a very easy small sweet bite that will wow your friends and guests. A strawberry cup that is filled with cream cheese mousse!

if you wanna make these make sure that the berries are almost the same size. Cut the top and bottom section of the strawberry so it can stand and the top section you will hollow out with a small melon baller.  Place them top side down on a kitchen towel to absorb the extra juice from the strawberry.
Set them aside in a fridge.

Now prepare the cream cheese mousse. With one block of cream cheese at room temperature, slowly whip with a mixer or food processor so it will become smooth. Add half a cup of powdered sugar and a teaspoon of vanilla to flavor. Once it is smooth, set aside.

Measure 1 cup of heavy cream, and whip until stiff peak form. Fold the whipped cream into the cream cheese mixture until smooth and put in the fridge until ready to use.. or about 30 minutes.

Put the mousse in a piping bag with a star tip and pipe into strawberry cups. Place a strip of lemon peel and thyme leaf for garnish.

Ideally you will fill the strawberry cups and ready to serve as it is filled.

Candied Lemon Peel Garnish (Prepare Ahead)

Peel one lemon without the white pith. Slice the skin into very thin strips. Boil 2 cups of water and blanch the lemon strips for a minute. Boil another 1 cup of water and 1/2 cup of sugar. Add the blanched lemon strips and let it simmer for 3 minutes.

Drain and put the lemon strips on a paper towel. Save the lemon syrup for other application ( tea maybe?). Pat the lemon strips dry. In a small bowl, toss the lemon strips until it is coated in sugar and then place on a sheet of paper towel and let it dry for 2-3 hours.
