Strawberry, Basil & Elderflower Bonbon
Food for the gods! That's what chocolate was dubbed before. But now, chocolate can be enjoyed by regular folks like us!
My recent quest to introduce something new in my dessert repertoire has lead me to this heavenly confection.
This heart-shaped bonbon is made of a 58% cocoa fat dark chocolate and is filled with a fluid gel of strawberry puree, elderflower syrup and basil. I like the 58% cocoa fat content because it is not so sweet and the fruity flavor nuance is very evident. The tartness of the strawberries and elderflower perfectly complimented with the scent of fresh basil.
