Vanilla and Berry Swirl Mini Cupcakes

The quintessential cupcake. Bakers now a days get super creative making every cupcake flavor imaginable. For me I want something that has a straight forward good flavor, not so sweet and a soft cake base. I don't go crazy or fuzz over the popular flavor combos I just want a good cupcake with a luscious cream frosting. 

So this is a mini vanilla cupcake with a small dollop of raspberry preserve in the middle, topped with a swirl of Italian buttercream one flavored with vanilla (white) and red berry (pink). I used a closed star icing tip from Ateco to pipe the rosette and topped with green sugar pearls. Looks dainty, simple and yet classy. This is a 2-3 bite cupcake you won't feel guilty having.
