Red Currant and Roses
This pastry shines so well and it would seem like a glass or marble. A white chocolate red currant mousse is glazed with a red glaze flavored with rose water. It sits on top of a sponge cake layer coated with rosewater and coconut meringue. The textures and flavors are unique. A lingering after-taste of the rose water gives a very subtle finish.
