Cake Design - Cheery and Bright, Colors, Bold and Subtle Flavors
Designing a cake is a totally different process. Since you're setting a standard product, the recipe and assembly procedures takes a lot of consideration.
Here's a cake (and design) that can be served all through out the year. Although one may think that seasonally (the Strawberry) should always be considered, but this fruit is grown the whole year round.. and If it's winter here in our side of the world, it's summer months on the other side. Picture global trade. Support local and neighbor's produce.
Visual appeal is important for food, especially with desserts. It creates a positive impression. If a cake or dessert gets a second look then chances are you are going to enjoy it. That "Oh, Wow! I want that!" moment. I always tend to use fresh fruits as garnish. I love the natural colors. The tartness and sweetness of the fresh fruit offset the richness of the other ingredients. You get that clean flavor.
My favorite ingredients and mixtures to work on - chocolate, compotes, fresh fruits, and light cream mixtures. For texture I love crushed and toasted nuts. I love the shimmer of sugar pearls, too! They are like miniature jewels.
About this cake - Chocolate sponge cake brushed with Cointreau syrup, mixed berry compote and cream filling. Cointreau laced dark chocolate ganache frosting. Sliced Strawberries and sugar pearls.
