For The Bon Vivant, A Different Kind of Earl Grey
Most of our cakes are custom made. This is one of them. The Earl Grey Mousse. It contains a layer of chocolate sponge cake and dark chocolate ganache. A layer of tea flavored mousse sits on top the cake. To finish the mousse a clear gel steeped with the tea tops the mousse. The mousse is light and velvety. Decadent.
For the shop I rearranged the layers doing away with the gel and turned it into a roulade.
The slices are about an inch thick. A luscious dark chocolate ganache covers the cake. It's firm and yet it just starts to melt once it is in your mouth. The ganache has an incredible sheen. Mousse is airy. Bittersweet. Floral. Addictive.
Just look at the beauty! It reminds me of tootsie roll candy..only better! To get really clean slices we left it overnight in the freezer for the ganache to set, and then while it is still frozen a warm, thin cake slicer is used to cut the portions.
So one asked, why just an inch-thick portions? First, desserts are supposed to be enjoyed moderately..(..one portion for every hour!?) ;)
