Red Velvet



Red Velvet cake is one of my favorite cakes to make. The crimson color is from the chocolate powder and the food color added to it. You can make red velvet cake with red beets for color, too!

I was asked - How do I make the frosting this smooth? The tip is to make sure that the cream cheese and the butter is at room temperature and using a food processor. I find the machine really effective in making sure that both the cream cheese and butter mixed almost like mayo.. smooth and silky. The role of the powdered sugar, not only sweetening the cream but also holding the ingredients together to make it firm.  The proportions of the ingredients dictate the consistency whether it can be piped to hold it's shape or be ready for frosting. A slightly chilled cream is more appropriate for piping and frosting as it will stick better to your cake or yield to the design of the piping tip.
