As Easy As Cheesecake!

Simple ingredients make up a cheesecake. And it's ready one of the most easiest cakes to bake and you can make ahead. My version of the cheesecake I skipped the trouble of crushing cookies to make up the crust. I use a sponge cake. Yes, a sponge cake that has been baked in a baking sheet to it's relative thin layer. I also prefer to bake my cheesecake in a silicone mold. The end product has clean sides and you don't see the sponge layer at the bottom. I still bake it in a water bath. After it has sat and cooled to room temperature. I move the cake to the freezer until ready to serve. Once frozen, unfolding the cake is a breeze and it comes out with really clean sides.
