Tuiles de France! The race to shape the french cookie




Delicate cookies are my thing. . like Macarons! These cookies are called Tuiles in french or Tiles.. Roof tiles to be exact. They are made of powdered sugar, butter, flour, egg and egg whites and sliced almonds. 

Making Tuiles is easy compared to its smooth shell capped cousin the Macaron. You just have to work fast and keep an eye on the cookie while it is baking because they could burn fast. Once the mixture is made it is slightly fluid. That's how you take advantage of spreading the batter thin. As it bakes on a silpat lined baking sheet they spread a little more. After of 5-7 minutes of baking turning lightly golden brown you pull the tray out of the oven and shape the cookies over a baguette mold or a rolling pin. Expect burning your hands a little bit when shaping them like so but it's all worth it when cooled and eaten.. Great with cold confections, coffee or tea. To complete the experience make that coffee french pressed and the tea - a Mariage Fréres!
